One of the most prolific vegetables in my garden is summer squash. Usually by late July, we have more yellow squash and zucchini than we know what to do with! A delicious way to preserve squash (or any vegetable) is to make relish.
You will only need a handful of ingredients to make this yummy preserve to enjoy all season -
8 cups diced squash (or vegetable of your choosing)
2 cups diced onions
4 bell peppers, diced
3 Tablespoons pickling or kosher salt
2 cups white vinegar (or apple cider vinegar)
2 cups granulated sugar
3 - 4 teaspoons pickling spice
1 tsp turmeric (optional)
1 tsp ground mustard (optional)
1 tsp celery seed (optional)
When I first began to preserve food, I learned a lot from this book - Ball Complete Book of Home Preserving. There is also an abundance of information online. If you are a beginner, canning and preserving may feel intimidating. Don't be afraid to experiment. Like most things, once you have a basic understanding you can begin to get creative!
